Mayim Bialik's Watermelon Salad with Vinaigrette


Salad:
1/2 a seedless watermelon, cubed
2 ounces crumbled feta cheese
1/2 cup toasted pine nuts
4 cups organic baby greens

Vinaigrette:
Juice of 1 lemon
1/8 cup red wine vinegar
1/8 cup olive oil
Salt and pepper, to taste

Combine salad ingredients in a large bowl. In a small bowl, juice lemon, add red wine vinegar, olive oil, salt and pepper for the vinaigrette. Whisk vinaigrette together and add to salad, tossing gently.
