
Mayim Bialik's Double Chocolate Brownies
1 large sweet potato
1 cup soymilk or rice milk (or regular if you're not making it vegan)
1/4 cup oil
1 1/2 cups brown sugar
1 1/2 cups cocoa powder
2/3 cup pastry flour (whole wheat or regular)
1/4 teaspoon baking soda
3/4 cup chocolate chips (vegan or not)
Cook sweet potato either by boiling it in 1 cup water or microwaving it until tender. Allow it to cool. Meanwhile, mix soymilk with oil. In a separate bowl, mix dry ingredients (omitting chips) and then combine with the oil/milk. Skin the sweet potato and mash well. Add to bowl and mix. Add the chips and mix well.
Lightly oil a 9x13-inch pan. Spread batter evenly in pan and bake at 350 degrees F for 35 minutes or until a toothpick inserted comes out clean. Cool before serving. Serve with soy ice cream.
